Ingredients

1 lb
skinless, boneless and cut into small cubes chicken breast
1/2 lb
smoked turkey slices
1/2 lb
provolone slices

sun dried tomatoes
24 leafs
sage
salt and pepper

Marinade

1/2
medium (chopped) onions
4 cloves
chopped garlic
1
zest lemon
2 sprigs
thyme
1
juiced lemon
(enough to drench the chicken) oil
black pepper

Sauce

2 heaping tbsp
chopped parsley
3
chopped jalapeno peppers
1/2
medium (chopped) onions
2
juice and zest lime
1 large
ripe and grated tomato
1 tbsp
honey
salt and pepper

Instructions

Lay the turkey slices on a board, place a few leaves of sage on it and then place the provolone, roll tightly, cut about one-inch length and set aside. Place all the ingredients in front of you and start preparing the Speducci by repeating this sequence four times: chicken, sundried tomato, turkey & provolone roll, end the skewer with a piece of chicken. Grill on a lively fire for about 2 minutes on each side. Mix all the ingredients in a bowl and pour over the skewers, marinate for at least 2hrs before grilling Mix all the ingredients in a bowl taste for correct seasoning and spread over chicken.
