INGREDIENTS
- .450 kg extra lean ground beef
- 1 medium diced onion
- 2 cloves minced garlic
- 2 tsp dried oregano leaves
- 1 tsp dried basil leaves
- 1/2 tsp cracked black pepper
- 1/4 tsp iodized salt
- 1/2 cup soft sun dried tomatoes cut into thin slices
- 796 mL can crushed tomatoes
- 540 mL rinsed and drained can lentils
- 1 Tbsp Worcestershire sauce
METHOD
- In a large skillet over medium high heat brown meat, breaking it up as it cooks into small pieces. Add onion and garlic and cook together for 2-3 minutes or until the onion starts to become soft.
- Add oregano, basil, pepper and salt and mix in well.
- Add sun dried tomatoes, crushed tomatoes, drained lentils and Worcestershire. Stir in well. Cover with a lid, reduce to simmer and cook for 25 minutes stirring occasionally.
- To serve: Preheat oven to 325°/160°C slice whole wheat buns in half, place cut side onto the oven rack, toast in the oven to desired brownness. Scoop ¾ cup (180 mL) of the Sloppy Joe mixture onto one half of the bun. Top with the other half and serve with a side salad or Cole slaw.
