peeled cut russet potatoes

cooked lobster meat
1/4 cup
of crumbled feta cheese
2 tablespoons
chopped chives
2 tablespoons
of extra-virgin olive oil
Kosher salt and pepper

ripe avocado
1/2
of lemon juice and zest
2 tablespoons
extra-virgin olive oil
1/3 cup
of hot water
2 splashes
of hot sauce and Worcestershire

Instructions
- Place fries into T-fal actifry with 2 tablespoons of olive oil. Turn on fry setting for 30 minutes.
- Remove season with salt and pepper, top with lobster meat and crumbled feta cheese.
- drizzle with Avocado hollandaise and garnish with chopped chives
- Hollandaise : In a blender, purée avocado with lemon juice and zest. Add hot water, hot sauce, Worcestershire. Slowly drizzle in olive oil and season to finish
