INGREDIENTS
- 3 peeled cut russet potatoes
- 1.5 cups cooked lobster meat
- 1/4 cup of crumbled feta cheese
- 2 tablespoons chopped chives
- 2 tablespoons of extra-virgin olive oil
- Kosher salt and pepper
- 1/2 ripe avocado
- 1/2 of lemon juice and zest
- 2 tablespoons extra-virgin olive oil
- 1/3 cup of hot water
- 2 splashes of hot sauce and Worcestershire
- Salt and pepper
METHOD
- Place fries into T-fal actifry with 2 tablespoons of olive oil. Turn on fry setting for 30 minutes.
- Remove season with salt and pepper, top with lobster meat and crumbled feta cheese.
- drizzle with Avocado hollandaise and garnish with chopped chives
- Hollandaise :
In a blender, purée avocado with lemon juice and zest. Add hot water, hot sauce, Worcestershire. Slowly drizzle in olive oil and season to finish
