Ingredients

1 1/2 lb
(21/25 in size) peeled and deveined shrimps
1
peeled, sliced, cut into sticks cantaloupe
10 thin slices
Prosciutto crudo

Marinade

1/2 medium
chopped red onion
2 cloves
chopped garlic
1
zest and juice lemon
3 sprigs
picked thyme
(to drench the skewers) oil
black pepper

Sauce

roasted, peeled and chopped red pepper

chopped red onion
2 cloves
chopped garlic
2 tbsp
chopped parsley
olive oil

salt and pepper

Instructions

Wrap each stick of melon with the prosciutto, cut into pieces about one-inch length and set aside. Prepare the skewer by inserting a shrimp and a melon four times into an 8-inch bamboo skewer, end the sequence with a shrimp. Grill on a lively fire for about 2 minutes on each side. Marinade Mix all the ingredients in a bowl and pour over the skewers, marinate for at least 2hrs before grilling Sauce Mix all the ingredients in a bowl taste for correct seasoning and spread over
