Sheet pan broiled salmon and vegetables with sticky soy balsamic sauce

Ingredients

1 side
Atlantic salmon, skin-on
3 cups
broccoli florets, about 1 head
2
red bell peppers, seeded and cut into chunks
1
zucchini, cut into chunks
1
red onion, peeled and cut into wedges
1 tbsp
canola oil
1 tbsp
sesame oil
1/2 tsp
salt
2 tbsp
sesame seeds, (optional)

Sticky soy balsamic sauce

1/4 cup
balsamic vinegar
1/4 cup
maple syrup
1/4 cup
sodium reduced soy sauce
1 clove
minced garlic

Instructions

Arrange oven rack to middle position. Set oven to broil. Line one large or two small baking sheets with parchment paper. In small bowl, combine canola oil, sesame oil and salt. Place salmon skin-side down in middle of sheet pan and vegetables around edges. (If using 2 sheet pans place salmon on one and vegetables on other). Drizzle half of oil mixture over vegetables, tossing to coat. Pour remaining oil mixture over salmon. Broil just until salmon is opaque, about 8-10 minutes. Meanwhile, in small pot over medium heat, combine vinegar, maple, soy sauce and garlic. Cook, scraping bottom with spatula, until slightly thickened, about 4-6 minutes. Thin with water, one teaspoon at a time, if needed. Drizzle over salmon and vegetables. Sprinkle with sesame seeds (if using). Tip: A large baking sheet is about the size of two standard baking sheets (21 x 15 inches) and makes family sheet pan dinners a breeze. You can find them online or in restaurant supply stores.
