Saskatchewan inspired lentil & quinoa salad with honey mustard vinaigrette

Ingredients
1 cup
cooked quinoa
1 cup
cooked lentils
1/4 cup
red pepper, finely diced
1
scallion, finely diced
1
small carrot, grated
1/2 tsp
grated garlic
1 tsp
whole grain mustard
2 stalks
parsley, finely sliced
Honey Mustard Vinaigrette
3 tbsp
Dijon
3 tbsp
honey
2 tbsp
apple cider vinegar
3 tbsp
lemon juice
3/4 tsp
kosher salt
1/3 tsp
white pepper
Instructions
1. To assemble salad combine all ingredients and adjust seasoning with salt and pepper.
2. In a jar add all ingredients for vinaigrette and shake vigorously with the lid on.
3. Pour over desired amount onto salad and combine well before serving.
