METHOD

  1. Preheat a cast-iron or heavy-bottom pan over medium heat, preheat a cast-iron sandwich press
  2. Add butter and olive oil to the pan, season turkey breast with salt and pepper on both sides
  3. Gently roll the turkey breast into the pan away from you, presentation side down first, sauté until golden brown
  4. Turn turkey breast over to finish, using an instant-read probe thermometer check the thickest part for 165°C
  5. Remove from the pan and rest for 5 minutes, slice evenly across the width of the breast on a slight angle
  6. Spread one side of the rolls with Mojo, spread the other side with mustard
  7. Layer Swiss Cheese on both sides, layer pickles and turkey, close sandwich and butter the outside of both halves
  8. Place the sandwich on the grill with the sandwich press on top, grill until golden and melted

 

TECHNIQUE-MOJO

  1. Combine ingredients in a medium bowl, mix to incorporate
