METHOD
- Preheat a cast-iron or heavy-bottom pan over medium heat, preheat a cast-iron sandwich press
- Add butter and olive oil to the pan, season turkey breast with salt and pepper on both sides
- Gently roll the turkey breast into the pan away from you, presentation side down first, sauté until golden brown
- Turn turkey breast over to finish, using an instant-read probe thermometer check the thickest part for 165°C
- Remove from the pan and rest for 5 minutes, slice evenly across the width of the breast on a slight angle
- Spread one side of the rolls with Mojo, spread the other side with mustard
- Layer Swiss Cheese on both sides, layer pickles and turkey, close sandwich and butter the outside of both halves
- Place the sandwich on the grill with the sandwich press on top, grill until golden and melted
