INGREDIENTS
- 1 loaf of sourdough
- 10 eggs
- 6 oz swiss cheese
- 1 teaspoon cinnamon
- 1 tablespoon vanilla
- 1/2 tablespoons kosher salt
- 8 slices prosciutto
- 4 oz maple syrup
- 1 tablespoon sliced chillies
- 1 handful greens
- 1 large nub butter
- 1 splash olive oil
METHOD
Special tools: cast iron pan ring mold
- Cut 4 slices of sourdough 2 inches thick and punch out with a large ring mold. Cut a small pocket and stuff with 1.5 oz Swiss cheese
Batter
- In a mixing bowl beat 6 eggs with vanilla, cinnamon and salt. Place bread in and let absorb.
- In a medium heat cast iron pan melt butter in a splash of olive oil. Caramelize bread in all sides. Toss in oven for 3 minutes at 400.
- In a medium pot poach 4 eggs.
- Remove bread and plate. Top with poached eggs, garnish with greens and prosciutto.
- Mix maple syrup with chillies, drizzle over entire dish and serve.
