Lobster Roll Grilled Cheese

Ingredients

lobster, cooked and shelled

celery stalk, fine diced
1/2
lemon, juiced
2 tbsp
mayo
1/2 cup
gruyere, shredded
1/2 cup
white cheddar, shredded
4 slices
brioche
4 tbsp
salted butter
2 tsp
chives, finely chopped

Sauce

4 tbsp
olive oil
1
egg yolk
1/2
lemon, juiced
1/2
garlic clove
1 tsp
tarragon, chopped
1 tsp
basil, chopped

Instructions

Method
  1. Lightly toast your brioche slices and set aside.
  2. Chop the cooked lobster into small pieces.
  3. Mix mayo, diced celery, lemon juice and lobster in a bowl together and season with salt and pepper. Add all of the shredded cheese to the lobster mixture and combine.
  4. Add all sauce ingredients to a blender and mix until smooth. Pour into 2 ramekins.
  5. Melt butter in a non-stick pan on medium heat.
  6. Divide the lobster cheese mixture on 2 pieces of toast, add the tops and press down.
  7. Place in the melted butter pan and cook each side for 2-3 minutes.
  8. Remove from heat and cut into 4 pieces.
  9. Sprinkle with chives, serve with sauce and enjoy!
