Kale and Mango Salad

Ingredients

Dressing

1 tbsp
extra virgin olive oil
1 tbsp
apple cider vinegar
2 tsp
pure maple syrup
1 tsp
grainy dijon
4 cups
finely chopped, stalks removed kale leaves
1 ripe
chopped mango
1/2
chopped avocado
1/4 cup
raw and unsalted pumpkin seeds
2.5 oz
crumbled feta cheese

Instructions

1. In a large bowl make the dressing: whisk together oil, vinegar, maple syrup and mustard. 2. Add chopped kale, mango, avocado and pumpkin seeds, toss well. 3. Sprinkle with feta, toss and serve.
