INGREDIENTS
Dressing
- 1 tbsp extra virgin olive oil
- 1 tbsp apple cider vinegar
- 2 tsp pure maple syrup
- 1 tsp grainy dijon
- 4 cups finely chopped, stalks removed kale leaves
- 1 ripe chopped mango
- 1/2 chopped avocado
- 1/4 cup raw and unsalted pumpkin seeds
- 2.5 oz crumbled feta cheese
METHOD
1. In a large bowl make the dressing: whisk together oil, vinegar, maple syrup and mustard.
2. Add chopped kale, mango, avocado and pumpkin seeds, toss well.
3. Sprinkle with feta, toss and serve.
