INGREDIENTS
- 2-3 cups finely sliced either Kale, cabbage or Brussel sprouts
- 1/4 cup finely sliced red onion
- 1/4 cup walnuts
- 2 tbsp green pumpkin seeds
- 1/4 cup cooked barley or another whole grain
- 1/2 cup white beans
- 1/2 cup roasted sweet potato optional
- 1-2 tsp ground flaxseed
- 1-2 tbsp apple cider vinegar
METHOD
- Plate this main course salad starting with the kale, cabbage, Brussels sprouts.
- Sprinkle with onion.
- Toss walnuts and pumpkin seeds over top.
- Sprinkle with barley.
- Top with beans and sweet potatoes, if using.
- Sprinkle with flaxseed and drizzle with oil then the vinegar and serve.
