INGREDIENTS
- 4 ( that’s right just the green stuff) leek tops
- 4 cloves sliced garlic
- 4 topped chillies
- 2 tbsp chopped ginger
- 1 splash white wine
- 2 tbsp olive oil
- 1 large nub butter
- salt and pepper
METHOD
Chop green tops of leeks in 1 inch pieces and wash throughout. Now was again. Yes the leek is a very dirty vegetable. Place pan on medium heat with olive oil and toast garlic and ginger. Toss in leek greens and chillies. Sauté then deglaze with white wine. Add butter, season and serve. This dish is amazing on it own as a side or with your favourite protein.
