INGREDIENTS
- 2 kg gammon
- Poaching liquid
- 4 L water
- 3 bay leaves
- 20 peppercorns
- 1 cinnamon stick
- 4 cloves
- 4 star anis
- 20 coriander seeds
- 1 onion chopped
- 3 stocks celery chopped
- 1 carrot chopped
Glaze
- 1 cup pineapple puree
- 1/2 cup maple syrup
- 1/4 cup cherry vinegar
- 1/4 cup cherry brandy
- 1/4 cup grainy mustard
- 2 bunches water cress for garnish
METHOD
Method
- Simmer gammon for 90 min or internal temperature hits 145 degrees. Chill and remove top layer or skin.
- Mix up glaze ingredients and simmer until mixture becomes think and gains a personality.
- Score the second layer of fat and glaze.
- Roast at 350 for 60-90 minutes or until internal temperature hits 150 degrees. Continue to baste every 20 minutes until it’s crusty and beautiful.
- Let rest for 20 minutes, carve and serve.
