INGREDIENTS
- ¾ cup romaine finely chopped
- ¾ cup radicchio finely chopped
- 1 hard-boiled egg finely diced
- ½ cup cherry tomatoes cut into halves
- ½ cup chickpeas rinsed and drained
- 2 tablespoons fresh basil finely chopped
- ¼ cup goat’s cheese
- ½ avocado squared
- 2 tbsp sunflower seeds shelled
- 1 tablespoon red wine vinegar or to taste
- 2 tablespoons olive oil or to taste
- Pinch of salt and pepper to taste
METHOD
- Combine all ingredients in a bowl.
- Toss with red wine vinegar, oil, salt and pepper and enjoy!
