Dr. Joey’s Free Weight Loss Soup

Looking for a “free food” to fill you up and keep you on track? If so, this hearty soup is for you. I highly recommend my weight loss clients make a big batch of this soup and have it handy to enjoy as much as they want, at any time of day.

Ingredients

6 cups
low-sodium vegetable broth, or chicken broth
1 can
28oz/796 ml diced tomatoes
2 cups
finely chopped cabbage
1 cup
finely chopped zucchini
1 cup
diced onions
1 cup
diced carrots
1 tbsp
dried oregano
1 tbsp
tamari, or soy sauce
1 tbsp
olive oil
2 tsp
tomato paste
1 tsp
balsamic vinegar

Instructions

  • Place all ingredients in a soup pot and bring to a soft boil.
  • Reduce heat to low and simmer for 30 minutes or until vegetables are tender.
