INGREDIENTS
- 6 cups low-sodium vegetable broth or chicken broth
- 1 can 28oz/796 ml diced tomatoes
- 2 cups finely chopped cabbage
- 1 cup finely chopped zucchini
- 1 cup diced onions
- 1 cup diced carrots
- 1 tbsp dried oregano
- 1 tbsp tamari or soy sauce
- 1 tbsp olive oil
- 2 tsp tomato paste
- 1 tsp balsamic vinegar
METHOD
- Place all ingredients in a soup pot and bring to a soft boil.
- Reduce heat to low and simmer for 30 minutes or until vegetables are tender.
