INGREDIENTS
- 12 fresh figs
- 12 strips double-smoked bacon
- 1 eggplant roasted
- 1 cup blue cheese
- 1 tablespoon roasted garlic
- 1/4 cup olive oil
- 1 lemon juiced and zest
- 1 handful watercress
- Salt and pepper
METHOD
Special tools: food processor
- Preheat oven to 450 convection.
- Score figs almost into quarters 3/4 down from top to mid-bottom. Stuff with a pinch of blue cheese and wrap with the most expensive bacon you can find.
- Bake in the oven until bacon is crisp about 8-10 minutes
In a food processor, puree eggplant, lemon olive oil and roast garlic. Season with salt and pepper. - Place a dollop of puree on the plate, top with figs and garnish with watercress and olive oil.
