Double-smoked bacon wrapped figs with blue cheese and roasted eggplant puree

Special tools: food processor

  1. Preheat oven to 450 convection.
  2. Score figs almost into quarters 3/4 down from top to mid-bottom. Stuff with a pinch of blue cheese and wrap with the most expensive bacon you can find.
  3. Bake in the oven until bacon is crisp about 8-10 minutes
    In a food processor, puree eggplant, lemon olive oil and roast garlic. Season with salt and pepper.
  4. Place a dollop of puree on the plate, top with figs and garnish with watercress and olive oil.
