INGREDIENTS
- 1 cup chopped parsley
- ½ cup chopped cilantro
- ¼ cup chopped dill
- 1 can drained chick peas
- 1 can drained corn
- 2 tbsp lemon juice
- 2 tsp honey
- ½ tsp cumin
- ¼ cup extra virgin olive oil
- 1 tsp red chili flakes
- ¼ cup crumbled feta
- ¼ cup sweety drops
- 1 cup olive oil
- 1 tsp kosher salt
METHOD
- In a mixing bowl, combine honey, cumin, chili flakes, lemon juice and olive oil whisk well, set aside.
- In a second mixing bowl, combine all remaining ingredients except feta and mix well with vinaigrette. Add to a serving bowl and top with feta before serving.
