INGREDIENTS
- 1 cup quinoa
- 2 cups orange juice
- 1 cup diced cucumber
- 1 diced red pepper
- 1/2 cup diced red onion
- 1 cup diced celery
- 1/2 cup diced carrot
- 1/4 cup chopped, fresh cilantro
- 3 tbsp chopped mint
- 3 tbsp extra-viring olive oil
- salt and pepper
- 1 tbsp toasted, slivered almonds
METHOD
- Rinse quinoa thoroughly with water. Combine quinoa and orange juice in a saucepan; bring to a boil over medium-high heat. Reduce heat and simmer, covered, for about 10 to 15 minutes or until liquid is absorbed; let cool.
- Combine cooled quinoa with cucumber, red pepper, red onion, celery, carrot, coriander, mint, and olive oil.
- Season with salt and freshly ground pepper. Garnish with slivered almonds.
