Vegetarian chickpea “tuna” sandwich

Zehra Allibhai shows us how to make this delicious plant-based “tuna” sandwich that is sure to have you craving this for your next lunch. Perfect for on-the-go, this meal is quick and easy to make, and most importantly, full of flavour!

This “tuna” sandwich is so good, you might forget what the real one really tastes like!

Ingredients

8
slices bread
1 can
chickpeas
1/4 cup
Greek yogurt
2 tbsp
mayonaise
2 tsp
salt
2 tsp
pepper
1 tsp
ground cumin
2 tbsp
lemon juice
1/4 cup
cilantro or parsley
1/4 cup
red onion, finely chopped
1/2 cup
chopped spinach

Instructions

  1. In a large bowl, add in drained and washed chickpeas, mash with a fork or potato masher. Add in the rest of the ingredients and mix until everything is well combined. 
  2. Toast bread and spread out the chickpea “tuna” mixture on each bread, add tomatoes if desired, cut sandwiches in half and enjoy!
