Reel in goodness with this homemade fish sandwich.

Ingredients
2 4oz
cod fillets
1oz
flour
1
egg, beaten with a splash of milk
1 cup
bread crumbs, seasoned
4 slices
brioche
2 slices
American cheddar
1 handful
lola rossa
2 cups
vegetable oil
Remoulade Sauce
3 tbsp
mayo
1 tsp
Dijon
1 tbsp
capers, chopped
1 tbsp
Gherkins, chopped
1 tbsp
green onion, chopped

salt and pepper
Instructions
- Pat cod dry and dust with flour. Then dredge through egg wash. Crust with bread crumbs and fry at 350F for two minutes per side. Remove and let rest with a slice of cheese on top.
- Toast brioche and mix all remoulade ingredients together.
- Build your sandwich with fille, remoulade and lola rossa.
- Serve with a smile knowing you will never go through another drive in again.
