Catch of the day fillet sandwich

Reel in goodness with this homemade fish sandwich.

Ingredients

2 4oz
cod fillets
1oz
flour
1
egg, beaten with a splash of milk
1 cup
bread crumbs, seasoned
4 slices
brioche
2 slices
American cheddar
1 handful
lola rossa
2 cups
vegetable oil

Remoulade Sauce

3 tbsp
mayo
1 tsp
Dijon
1 tbsp
capers, chopped
1 tbsp
Gherkins, chopped
1 tbsp
green onion, chopped

salt and pepper

Instructions

  1. Pat cod dry and dust with flour. Then dredge through egg wash. Crust with bread crumbs and fry at 350F for two minutes per side. Remove and let rest with a slice of cheese on top.
  2. Toast brioche and mix all remoulade ingredients together.
  3. Build your sandwich with fille, remoulade and lola rossa.
  4. Serve with a smile knowing you will never go through another drive in again.
