Beef tenderloin with peppercorn brandy cream

Ingredients
2-7 oz
center cut beef tenderloin steaks
salt and pepper
1/2 cup
butter
1/2 cup
heavy cream
1/2 cup
brandy
2 tsp
crushed peppercorns
1 tsp
mustard
1/2
lemon juice
Instructions
- Place pan over hot coals of the campfire
- Once hot toss in a nub of butter and sear steaks for 2 minutes on each side
- On the last turn add all butter and baste the beef
- Remove steaks, deglaze with brandy, cream, mustard, peppercorns and lemon
- Season and serve
