pierogi with Smoked Salmon and Shrimp

Ingredients

1/2 cup
deveined shrimp, peeled
1/2 cup
smoked salmon, sliced
1 cup
corn
1/2 cup
black beans
1/2 cup
white wine
1 tsp
dijon
1 tbsp
olive oil
1 tbsp
butter
1 tbsp
chopped garlic
1 tbsp
chopped shallots
1 tbsp
chopped chives
salt
pepper

Instructions

  1. Bring up a medium pot of salted boiling water. Poach the pierogies for 2 minutes
  2. In a large high heat saute pan add oil and butter, saute shallots, garlic. Add pierogies and shrimp.
  3. Toast lightly and deglaze with white wine, add dijon, corn and black beans.
  4. Finish with smoked salmon, plate and garnish with chives
