Scallop Ceviche with Garden Gems

Ingredients

4 large
live scallops
2
lime juice, and lightly zested
1 pinch
fresh chives
1 pinch
fresh dill
1 pinch
fresh basil
2
baby zucchini, with flowers
4 splashes
really expensive olive oil
salt and pepper

Instructions

  1. Shuck the scallops, clean them and the shells. Slice scallops into 5 pieces. Place scallops into lime juice for 5 minutes.
  2. Place scallop into the cleaned shell, garnish with fresh herbs, olive oil, sliced zucchini and torn flower. Season with salt and pepper and serve!!
