Ingredients
3 tablespoons
butter
3 tablespoons
flour
2 cups
milk
1 cup
grated mozzarella
1 cup
grated parmigiana
1/2 cup
crumbled goat cheese
1 pinch
nutmeg
to taste salt
to taste pepper
Instructions
1. In a medium sauce pot, melt butter on medium heat. Add flour, cook softly.
2. Slowly add the milk, whisking to prevent lumps. Once incorporated, continue to stir until sauce tightens up.
3. Turn to low hear and add goat, mozzarella and parmigiana.
4. Once cheese is melted, turn heat off and season with nut meg and salt & pepper.
