Chef Jason’s ultimate burger

Ingredients

3 lb
lean ground beef
2 cups
diced aged cheddar
½ cup
finely chopped herbs
¼ cup
chopped onion
2 tbsp
hoisin sauce
2 tbsp
finely chopped garlic
1 tbsp
Worcestershire sauce
2 cups
chopped double smoked bacon
2
eggs
½ cup
bread crumbs
3 tsp
salt
3 tsp
ground white pepper

fresh hamburger buns

large leaves of Boston bibb lettuce

ultimate burger patties
4 slices
aged cheddar
12 slices
cooked Icewine bacon
2 cups
crumbled blue cheese
2 cups
sliced beef brisket
2 cups
grilled portobello mushrooms
½ cup
cabernet onion jam

Instructions

  1. In a large mixing bowl, combine the ground beef, cheddar, herbs, onions, hoisin, garlic and Worcestershire
  2. Sauté the bacon over medium heat until cooked through
  3. Add the warm bacon, including the fat to the beef mixture
  4. Stir in the eggs, bread crumbs, salt and pepper
  5. Once its well combined, form the mixture into eight evenly sized burgers and chill before grilling
