Turkey + broccoli stir-fry

Ingredients

550g
(about 1 large bunch) broccoli, cut into small florets
¼ cup
water
1 tablespoon
canola oil
450g
ground turkey
4 cloves
garlic, chopped
1 tablespoon
chopped ginger
1/3 cup
roasted walnuts, cashews or peanuts

Sauce

¼ cup
white wine, or water
¼ cup
water
2 tablespoons
soy sauce
1 tablespoon
sugar
1 tablespoon
cornstarch
1-3 teaspoons
hot chili garlic sauce, (optional)

Instructions

Steamed rice or lettuce wraps for serving. 1.Stir the sauce ingredients together in a measuring cup. Reserve. 2.Combine broccoli with ¼ cup water in a large non-stick frying pan with a lid. Bring to a boil and cook, covered, 2 to 4 min or until broccoli is just barely tender-crisp and the pan is dry. Transfer to a bowl or plate to reserve. 3.Put the pan back on the stove over medium-high. Add the oil, then the turkey. Spread the turkey into an even layer and cook for 2 to 4 min or until starting to get golden. 4.Add the garlic and ginger and stir, breaking up the turkey into large pieces. Add the broccoli back to the pan and stir well. 5.Stir the sauce, then add it all at once and stir until it thickens, about 30 sec. Sprinkle with nuts. Serve over rice or in lettuce wraps.
