Tomato and olive pan-seared calamari salad

Ingredients

2
calamari, cleaned and cut into rings
1 teaspoon
garlic, sliced
1 tablespoon
shallots, sliced
1/2 cup
tomatoes, diced
1/4 cup
almond stuffed olives, sliced
1/4 cup
olive oil croutons
2 tablespoons
olive oil
1 splash
white wine
1 handful
fresh basil torn????
to taste
salt and pepper

Instructions

  1. In a medium-hot pan add a splash of olive oil. Season squid and sear.
  2. Add garlic and shallots, deglaze with white wine. Reduce. Add tomatoes, olives and croutons.
  3. Season, remove and serve. Garnish with basil and olive oil.
