INGREDIENTS
- 2 calamari cleaned and cut into rings
- 1 teaspoon garlic sliced
- 1 tablespoon shallots sliced
- 1/2 cup tomatoes diced
- 1/4 cup almond stuffed olives sliced
- 1/4 cup olive oil croutons
- 2 tablespoons olive oil
- 1 splash white wine
- 1 handful fresh basil torn????
- to taste salt and pepper
METHOD
- In a medium-hot pan add a splash of olive oil. Season squid and sear.
- Add garlic and shallots, deglaze with white wine. Reduce. Add tomatoes, olives and croutons.
- Season, remove and serve. Garnish with basil and olive oil.
