INGREDIENTS
- 1/2 lb ground turkey
- 1/4 cup milk
- 1/4 cup breadcrumbs
- 1/4 clove garlic minced
- 1 tbsp parsley chopped
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
- 4 splashes tobasco
Broth
- 1.5 litres turkey broth
- 1.5 cups spinach
- 1 egg whisked
- 1/2 cup parmigiana
- 1/2 lemon juiced
- 1 tbsp chives chopped
- 6 twists black pepper
METHOD
- Mix meatball ingredients together and roll out tiny meatballs.
- Bring broth up to a simmer and add mini meatballs. Let simmer for 3 minutes, give a firm stir then add spinach, egg, parmigiana and lemon.
- Let it come back up to a soft simmer and serve.
- Garnish with black pepper and chives.
