INGREDIENTS
- 500g lean ground beef or turkey
- 1/3 cup panko
- 1/4 tsp onion powder
- 1/4 tsp garlic powder
- 1/4 tsp salt
- 540-mL can pineapple chunks
- 680-mL can tomato sauce
- 3 tbsp honey
- 1 tbsp apple cider vinegar
- 1 teaspoon sesame oil
METHOD
- Preheat the broiler and position one oven rack about 8 inches below the element.
- Line a large rimmed baking sheet with parchment paper.
- Combine beef with panko, onion and garlic powders and salt. Mix well then shape into about 20 meatballs. Place on prepared sheet and spray meatballs with cooking spray.
- Broil for about 3 min or until well-browned (meatballs won’t be cooked through yet).
- Drain the pineapple, saving juice. Combine the pineapple juice with tomato sauce, honey and vinegar in a large pot.
- Bring to a boil, then add meatballs, reduce heat and simmer, covered, 10 min or until meatballs are cooked through.
- Stir in pineapple chunks and sesame oil.
- Package into 2 zip-lock bags, then cool completely in the fridge (leave the bags open).
- Freeze up to 2 weeks. To reheat, thaw overnight in the fridge then reheat gently on the stove or in the microwave.
- Serve over rice.
