INGREDIENTS
- 7 garlic cloves
- 4 scallions chopped
- 2 scotch bonnet chillis
- 1 onion finely chopped
- 1 (2-inch) piece ginger roughly chopped
- 2 tbsp brown sugar
- 1 tbsp thyme leaves
- 1 tbsp ground allspice
- 1 tsp ground cinnamon
- 1 tsp ground nutmeg
- 1/2 cup soy sauce
- 1 tbsp tamarind concentrate
- 2 tsp vegetable oil
- 2 tsp lime juice
Sriracha Honey and Herbs
- 1/3 cup honey
- 1/3 cup sriracha
- 1 tbsp apple cider vinegar
- 2 tsp garlic minced
- 1 tsp thyme leaves
- 1 tsp dried dill
- 2 tsp chives minced
Cassareep Dressing
- 1/3 cup grapeseed oil
- 1/4 cup apple cider vinegar
- 1/4 cup cassareep
- 1 tsp dijon mustard
- 1/4 cup brown sugar
- 1/4 tsp ground cinnamon
- 1 wiri wiri pepper finely chopped
- 1½ tsp salt
METHOD
Jerk Marinade
- Combine all ingredients in a blender and blend until smooth.
- The marinade can be stored in the fridge for up to 7 days
Sriracha Honey and Herbs
- Combine ingredients in a bowl and mix well. Store in the fridge for up to 10 days.
Cassareep Dressing
- Combine all the ingredients in a blender and blend until smooth.
- Leftover dressing can be stored in an airtight container for a week.
