INGREDIENTS
- 2 large spiralized zucchini
- 1 lb peeled and deveined shrimp
- 2 minced garlic cloves
- 1 tsp of paprika
- ½ tsp of chili flakes
- 2 tbsp of lemon juice
- 2 tbsp of olive oil
- ½ tsp of salt
- pepper
- 2 tbsp finely chopped fresh parley
METHOD
- Use a spiralizer to make zucchini into pasta like noodles. Once done, use paper towel to squeeze out excess water.
- Sprinkle the zucchini with salt and let sit for 15 minutes.
- Combine garlic, paprika, chili flakes, lemon juice and peeled shrimp in a bowl and mix well.
- In a skillet, heat olive oil over medium – high heat and add shrimp. Sautee shrimp until they turn color.
- Add zucchini noodles and parsley to shrimp and cooks for 3-5 minutes.
- Plate and enjoy!
