Smoky cauliflower tacos with avocado crema

Ingredients
3 cups
cauliflower, (chopped into small florets)
2 - 4 tablespoons
coconut oil, (melted)
3 teaspoons
ground cumin
2 teaspoons
chili powder
2 teaspoons
smoked paprika
1 teaspoon
sea salt

tortillas
1/2 cup
red cabbage, shredded
Avocado Crema
2
avocados
1 clove
garlic
1/4 cup
Greek yogurt
1/4 cup
water
1/2 teaspoon
salt
squeeze
lemon or lime
Instructions
- Cauliflower: Preheat oven to 400 degrees F (204 C) and add cauliflower to a large baking sheet. Add oil, cumin, chili powder, paprika, and salt. Toss to combine and roast for 20-25 minutes or until golden brown and tender.
- Avocado Crema: Mix all ingredients in a food processor or blender until smooth.
- Final: Fill each tortilla with cauliflower, shredded cabbage, a drizzle of avocado crema, and cilantro.
