INGREDIENTS
- 1 lb 51-60 size shrimp peeled and deveined
- 1 avocado diced
- 1/2 chilli pepper sliced
- 1/4 cucumber seeded and diced
- 1/4 red onion sliced
- 3 limes juiced
- 3 tablespoons EV olive oil
- to taste salt and pepper
- 1/4 head iceberg lettuce sliced
- 1/2 cup coriander picked
- 12 small taco shells hard
METHOD
- Toss shrimp into a medium bowl and top with lime juice. Marinade for 22 minutes
- Toss with avocado, red onion, cucumber, chilli and olive oil. Season with salt and pepper and let sit for 8 minutes
- Place iceberg in tacos and top with ceviche, garnish with coriander and serve
