Ragu Alla Bolognese

Ingredients

1 lb
ground beef
1 lb
sausage meat, loosened
6 oz
ground pancetta
3 cups
mixed ground onion celery and carrots, minced
4
garlic cloves
1 cup
white wine
8 oz
can tomato paste
1/2 cup
milk
1 cup
chicken stock
2
bay leaves
1 dash
grated nutmeg
2 oz
olive oil
2 tbsp
butter
salt
pepper

Instructions

  1. Sauté the vegetables and the garlic with the oil and the butter, add the bay leaves and the pancetta and sauté until it is translucent.
  2. Add the meat to the vegetables and sauté over high heat; make sure to break up all the lumps of meat.
  3. Sprinkle with the wine and evaporate well, add the milk and simmer for about ten minutes and then add the tomato and the stock.
  4. Simmer covered for at least 2 hours, stir from time to time and do not let it stick and burn.
