Potato gnocchi with double smoked salmon

Dumplings topped with grilled artichokes, capers berries, red onion, lemon zest, feta cheese and herb pesto.

Ingredients

4 cups
PC Gnocchi Potato Dumplings
1 cup
double smoked salmon
1 tbsp
grape seed oil
1 cup
grilled artichoke halves
1/2 cup
caper berries
1 cup
red onion, sliced
2
whole lemons, (julienne the zest and squeeze for juice)
1/2 cup
herb pesto
1/2 cup
feta cheese, diced

Instructions

  1. Warm the grape seed oil in a fry pan over medium to high heat.
  2. Add in the gnocchi, red onions and grilled artichoke halves.
  3. Sauté until the gnocchi is golden brown and then add the caper berries, lemon zest, juice and herb pesto.
  4. Once everything is warm through, add in ripped pieces of double smoked salmon, season with salt, pepper and serve immediately sprinkled with the diced feta cheese.
