Potato gnocchi with double smoked salmon
Dumplings topped with grilled artichokes, capers berries, red onion, lemon zest, feta cheese and herb pesto.

Ingredients
4 cups
PC Gnocchi Potato Dumplings
1 cup
double smoked salmon
1 tbsp
grape seed oil
1 cup
grilled artichoke halves
1/2 cup
caper berries
1 cup
red onion, sliced
2
whole lemons, (julienne the zest and squeeze for juice)
1/2 cup
herb pesto
1/2 cup
feta cheese, diced
Instructions
- Warm the grape seed oil in a fry pan over medium to high heat.
- Add in the gnocchi, red onions and grilled artichoke halves.
- Sauté until the gnocchi is golden brown and then add the caper berries, lemon zest, juice and herb pesto.
- Once everything is warm through, add in ripped pieces of double smoked salmon, season with salt, pepper and serve immediately sprinkled with the diced feta cheese.
