A potato crunch side dish

Ingredients

lb new potatoes
1/4
cup butter
1/4
cup panko bread crumbs
2
tbsps olive oil
2
tbsps parsley, chopped
TT
salt
TT
pepper

Instructions

  1. Cover potatoes in a small pot and bring to a simmer until tender.
  2. Drain well and let dry.
  3. Add butter and olive oil to a large pan, then toast panko to golden. Toss in potatoes and crush with a fork.
  4. Season and garnish with parsley.
