INGREDIENTS
- 1 lb new potatoes
- 1/4 cup butter
- 1/4 cup panko bread crumbs
- 2 tbsps olive oil
- 2 tbsps parsley chopped
- TT salt
- TT pepper
METHOD
- Cover potatoes in a small pot and bring to a simmer until tender.
- Drain well and let dry.
- Add butter and olive oil to a large pan, then toast panko to golden. Toss in potatoes and crush with a fork.
- Season and garnish with parsley.
