Pineapple salad with fried rice

Two side dishes that pair perfectly with Thai chicken satay - sweet and spicy pineapple salad, served with a filling fried rice!

Pineapple Salad

  1. Combine everything in a bowl well and season to your desired taste. Set aside until required.

Fried Rice

  1. In a large frying pan on high heat add cooking oil. 
  2. Fry rice constantly moving it in the pan. 
  3. Fry for one minute then add red pepper and seasoning and set aside until required. 
  4. Assemble plate by spooning rice, topping with some pineapple, then skewers and top with chutney and fresh herbs.

pineapple, peeled, cut into chunks

lime juice, fresh
1 tsp
garlic, puree
1 tsp
lime zest
kosher salt, to taste
black pepper, to taste

Fried Rice

2 cups
day old cooked rice
2 tsp
sesame oil
1 tsp
grapeseed oil
½
red pepper, finely chopped
kosher salt, to taste
black pepper, to taste
