Pineapple Salad
- Combine everything in a bowl well and season to your desired taste. Set aside until required.
Fried Rice
- In a large frying pan on high heat add cooking oil.
- Fry rice constantly moving it in the pan.
- Fry for one minute then add red pepper and seasoning and set aside until required.
- Assemble plate by spooning rice, topping with some pineapple, then skewers and top with chutney and fresh herbs.
INGREDIENTS
- ½ pineapple peeled, cut into chunks
- 2 tsp lime juice fresh
- 1 tsp garlic puree
- 1 tsp lime zest
- kosher salt to taste
- black pepper to taste

- 1 tsp grapeseed oil
- ½ red pepper finely chopped
