INGREDIENTS
- 6 cups cooked pasta of choice
- 1 cup cooked coldwater shrimp
- 1/4 cup torn basil leaves
- 1/2 red onion thinly sliced
- 1 tbsp olive oil
- 1/2 cup good quality basil pesto
- 1 lemon zested and juiced
- To season salt and pepper
METHOD
- Place all ingredients in a large bowl and gently mix with spoon until well-combined.
- Let cool in refrigerator until ready to serve.
