Latke Plate with Shawarma Mushrooms

What if we upsized the latkes and downsized the meal? Instead of latkes being just one option among many on the big Hannukah bagel spread, what if they became the base for the Personal Latke Plate (PLP)?
One crisp, fried latke per person that’s equal in size and deliciousness to three regular latkes, is set on a plate, on top of which inspired toppings are added to complete the meal. Exhibit A!
Ingredients
1 tsp
ground cumin
1 tsp
ground coriander
1 tsp
garlic powder
1/2 tsp
sweet paprika
1/2 tsp
ground cardamon
1/2 tsp
ground turmeric
1 tsp
ground ginger
1/2 tsp
black pepper
1/2 tsp
ground cinnamon
sea salt to taste

olive oil
1 lb
whole white mushrooms, cleaned aand halved
1/2 tsp
sea salt
1/4 cup
pickled red onions
1/2 cup
grape tomatoes, halved
1/4 cup
tahini sauce
handful parsley
1
lemonn, quartered
Instructions
- Stir shawarma seasoning ingredients together to combine. Set aside.
- Heat oil in a medium non-stick pan over medium heat. Add mushrooms and season with salt. Cook for 3-5 minutes, stirring often, or until the mushrooms start to brown and leach liquid.
- Add 1 tbsp of the shawarma spice blend and toss to coat. Cook for another 3-5 minutes or until mushrooms are nicely browned and fragrant.
- Divide mushrooms between four Personal Latke Plates, and top with some grape tomatoes, tahini dressing, pickled red onion, parsley, and a wedge of lemon on the side. Happy Hannukah!
