Paneer and mixed vegetable chow mein

Ingredients

tbsp grapeseed oil

lb paneer, cut into ½ cubes

tsp cumin powder

tsp garam masala

cup onion, diced

cloves garlic, minced

oz chow mein noodles

bunch bora/Chinese long bean, sliced into 1” pieces

red pepper, de-seeded and sliced

cup carrot, grated
3/4
cup cabbage, shredded
2
scallions, sliced into 1” pieces
2
wiri wiri pepper, thinly sliced
cilantro, for garnish
kosher salt, to taste
fresh cracked black pepper, to taste

tbsp grapeseed oil

Instructions

  1. Pre-heat wok to medium heat, add grapeseed oil. 
  2. Add onion, garlic, cumin, garam masala and salt. Allow to cook until onions become translucent, then add bora and sauté to combine ingredients. 
  3. Meanwhile, in a large pot of salted boiling water add chowmein and cook for 5-6 minutes, strain and set aside. 
  4. To the wok add paneer, carrot, cabbage, scallions, wiri pepper and toss. 
  5. Add chowmein and gently fold to combine.
  6. Garnish with cilantro and serve.
