INGREDIENTS
- 2 tbsp grapeseed oil
- 1/2 lb paneer cut into ½ cubes
- 1 tsp cumin powder
- 1/2 tsp garam masala
- 3/4 cup onion diced
- 4 cloves garlic minced
- 12 oz chow mein noodles
- 1 bunch bora/Chinese long bean sliced into 1” pieces
- 1 red pepper de-seeded and sliced
- 3/4 cup carrot grated
- 3/4 cup cabbage shredded
- 2 scallions sliced into 1” pieces
- 2 wiri wiri pepper thinly sliced
- cilantro for garnish
- kosher salt to taste
- fresh cracked black pepper to taste
- 2 tbsp grapeseed oil
METHOD
- Pre-heat wok to medium heat, add grapeseed oil.
- Add onion, garlic, cumin, garam masala and salt. Allow to cook until onions become translucent, then add bora and sauté to combine ingredients.
- Meanwhile, in a large pot of salted boiling water add chowmein and cook for 5-6 minutes, strain and set aside.
- To the wok add paneer, carrot, cabbage, scallions, wiri pepper and toss.
- Add chowmein and gently fold to combine.
- Garnish with cilantro and serve.
