Chef Devan Rajkumar shows how to make this very tasty pad thai dinner recipe that everyone will love.
INGREDIENTS
- 1 lb Shrimp (21-25c) peeled and deveined
- 3-4 Thai chilies thinly sliced
- 8oz rice noodle oz Rice noodle soaked in warm water 10 min prior to use
- 1/2 Onion sliced
- 1 Carrot thinly sliced into coins
- 1 Red pepper thinly sliced
- 2 Eggs beaten
- 2 Scallions roughly chopped
- 2 tsp Oil
- Salt & Pepper to taste
Sauce
- 2 tbsp Fish sauce
- 1 tbsp Lime juice
- 1 tbsp Soy sauce
- 1 tbsp Oyster sauce
- 1 tbsp Tamarind puree
- 1 tbsp Brown sugar
Garnish
- Bean sprouts
- Cilantro leaves
- Lime wedges
- 1/2 cup Toasted peanuts chopped
METHOD
Instructions:
- Combine all ingredients for sauce in a bowl, mix well and set aside.
- In a wok or large skillet on medium-high heat add 1 tsp oil.
- Then add shrimp, salt, pepper and sauté until golden brown, approximately 60-90 seconds.
- Remove shrimp from the pan.
- Add onion, carrot, red pepper, salt, pepper and mix well.
- Once vegetables begin to take on colour add Thai chillies, sauce and drained noodles. Mix well.
- Scramble 2 eggs in asepaaraate pan.
- Once all ingredients are combined add shrimp, scallions and eggs and toss to combine.
- Serve immediately garnished with bean sprouts, cilantro, lime wedges and chopped peanuts.
