INGREDIENTS
- 4 boneless, skinless chicken breasts
- 1/4 cup lemon juice
- 1/4 cup honey
- 2 tbsp soy sauce
- 1/2 tsp garlic powder
- 1 bunch broccoli cut into florets
- 1 tbsp canola oil
- 1/4 tsp salt
METHOD
- Combine chicken with lemon juice in a zip-lock bag or shallow dish. Let stand at room temperature 15 minutes or in the fridge up to 24 hours.
- Preheat the oven to 400F. Line a large baking sheet with parchment or foil. If using foil, spray the foil with cooking spray.
- Stir honey with soy sauce and garlic powder. Toss broccoli with oil and salt. Reserve.
- Take the chicken out of the marinade and place upside-down on prepared sheet. Bake 20 minutes. Take pan out of the oven and brush chicken with honey mixture. Place broccoli on sheet. Bake 10 minutes. Brush chicken with remaining honey mixture. Bake another 5 to 10 minutes or until chicken is springy when pressed and cooked through and broccoli is dark gold.
