“Do you want pizza dough that stretches out and stays in place? You know, the kind of dough that wants to listen and not wrestle like a seven year old at bed time?! Well here you go, the most obedient dough you have ever worked with.”
INGREDIENTS
- 1 kg 00 flour
- 13 g dry yeast
- 25 g kosher salt
- 600 ml cold water
- 15 ml extra virgin olive oil
METHOD
1. Place water and yeast into mixer—slosh for 3 min or until yeast is dissolved.
2. Add flour, salt and oil.
3. Using the dough hook attachment, mix the dough on low for 8 minutes, and then on medium high for 3 minutes.
4. Once done lightly flour the dough and remove. Portion into tight 8 oz balls with the bottoms pinched. (No seriously, pinch the bottom and place into air tight container.) Make sure to keep in mind that the dough should increase in size by 60%.
